Homemade Buttercream Frosting

Directions

  1. Remove the butter from the refrigerator at least 30–45 minutes before starting. The butter should be soft to the touch but not melted, which helps create a smooth, fluffy frosting without lumps.
  2. Place the softened butter in a large mixing bowl or the bowl of a stand mixer fitted with a paddle attachment. Beat on medium speed for 2–3 minutes until pale, creamy, and noticeably lighter in texture.
  3. Reduce the mixer speed to low and add the powdered sugar gradually, about ½ cup at a time. This prevents sugar clouds and allows the frosting to blend smoothly. Scrape down the sides of the bowl as needed.
  4. Once all the powdered sugar is incorporated, increase the speed to medium and beat for another 1–2 minutes. The mixture should look thick, smooth, and slightly glossy.
  5. Add the vanilla extract and continue mixing until fully combined. At this stage, the frosting will start to smell warm and fragrant, with a classic bakery-style aroma.
  6. Slowly drizzle in the heavy cream or milk while mixing on low speed. Increase to medium speed and beat until the frosting becomes light, airy, and spreadable. Add a little more cream if needed for a softer texture.
  7. Taste the frosting and adjust as desired. Add a pinch of salt to balance sweetness, or incorporate optional flavor boosters like lemon zest or cocoa powder.
  8. Beat the frosting on medium-high speed for a final 1–2 minutes to incorporate air. The buttercream should be fluffy, smooth, and easy to pipe or spread.
  9. Use immediately to frost cakes or cupcakes, or transfer to a piping bag fitted with your favorite tip for decorative finishes.
  10. If not using right away, cover the bowl tightly to prevent drying out.
