Directions

  1. Prepare the apples by peeling, coring, and slicing them into even slices about 6 mm thick. Uniform slices ensure the apples cook evenly and keep a pleasant bite.
  2. In a large saucepan or deep skillet, whisk together the granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, allspice, and salt while the pan is still off the heat. This prevents lumps from forming later.
  3. Slowly whisk in the water or apple juice until the mixture is smooth. Add the lemon juice, which helps balance sweetness and keeps the apples from browning.
  4. Place the pan over medium heat and cook, stirring constantly, until the mixture begins to thicken and turn glossy. You’ll notice it change from cloudy to translucent as it heats.
  5. Add the sliced apples to the thickened syrup and gently stir to coat them evenly. The apples will begin releasing their juices, adding depth and natural sweetness.
  6. Reduce the heat to medium-low and simmer for 8–10 minutes, stirring occasionally, until the apples are tender but not mushy. They should bend slightly when lifted with a spoon but still hold their shape.
  7. Stir in the vanilla extract and butter, if using. The butter adds a subtle richness and gives the filling a silky finish.
  8. Remove the pan from the heat and let the filling cool for 10–15 minutes. It will continue to thicken as it cools, reaching the perfect pie-ready consistency.
  9. Taste and adjust sweetness or spices if needed. Some apples are tarter than others, so this is your chance to personalize the flavor.
  10. Use immediately in your favorite pie recipe or transfer to a jar or container for later use.
