Healthy Pickled Beets

Directions

  1. Boil or steam sliced beets until tender but firm, about 15–20 minutes. Drain and let cool slightly.
  2. In a small saucepan, combine vinegar, water, honey, salt, and peppercorns. Heat gently until honey dissolves. Remove from heat and let cool slightly.
  3. Place garlic slices (and optional herbs or mustard seeds) into a clean jar. Add cooked beets.
  4. Pour the warm brine over beets, ensuring they are fully submerged.
  5. Seal the jar and let cool to room temperature before refrigerating.
  6. Refrigerate for at least 24 hours for best flavor.
  7. Serve chilled as a side dish, in salads, or as a snack.
