Directions

Step 1: Prep Vegetables

Dice the onion, mince the garlic, and chop the bell peppers into bite-sized pieces.

Step 2: Cook the Beef

Heat a large skillet over medium heat. Add ground beef and cook 5–7 minutes, breaking it up with a spoon until browned. Drain any excess fat.

Step 3: Sauté Aromatics

Add onions and garlic to the skillet with the beef. Cook for 3–4 minutes until onions are translucent and fragrant.

Step 4: Add Vegetables & Rice

Stir in the bell peppers, diced tomatoes, uncooked rice, beef broth, tomato paste, and seasonings (paprika, Italian seasoning, salt, and black pepper). Mix thoroughly to combine.

Step 5: Simmer

Lower the heat to medium-low, cover the skillet, and simmer for about 18 minutes. Stir gently at the 15-minute mark to prevent sticking and ensure even cooking.

Step 6: Add Cheese

Remove the lid, fluff the mixture with a fork, and sprinkle shredded cheese evenly on top. Cover again and allow the cheese to melt for 3–5 minutes.

Step 7: Garnish & Serve

Top with freshly chopped parsley before serving. Serve hot and enjoy the colorful, hearty flavors.
