Directions

  1. Wash and slice the green tomatoes into ¼ inch (0.5 cm) thick rounds.
  2. Sprinkle the slices lightly with salt and pepper and let them sit for 5 minutes.
  3. In one bowl, place the flour.
  4. In a second bowl, whisk together the eggs and milk.
  5. In a third bowl, mix cornmeal, breadcrumbs, paprika, and garlic powder.
  6. Dip each tomato slice first in flour, then into the egg mixture, and finally coat with the cornmeal mixture.
  7. Heat vegetable oil in a skillet over medium heat until hot but not smoking.
  8. Carefully place coated tomato slices into the oil in a single layer.
  9. Fry for 2–3 minutes on each side until golden brown and crispy.
  10. Remove and place on paper towels to drain excess oil before serving.
