Double Chocolate Banana Layer Cake

Directions

1. Prepare the Cake Layers:

  • Preheat oven to 175°C (350°F). Grease and line two 20 cm (8-inch) round cake pans.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract and mashed bananas.
  • Gradually add dry ingredients, alternating with buttermilk, mixing until just combined.
  • Divide batter evenly between pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely.

2. Prepare the Chocolate Frosting:

  • Beat butter until creamy. Gradually add powdered sugar and cocoa powder, mixing until smooth.
  • Add heavy cream, vanilla extract, and salt, and beat until fluffy and spreadable. Adjust consistency with more cream or powdered sugar if needed.

3. Assemble the Cake:

  • Place one cake layer on a serving plate. Spread a generous layer of chocolate frosting over the top.
  • Place the second cake layer on top and frost the entire cake with the remaining frosting.
  • Decorate with chocolate shavings, banana slices, or chocolate chips as desired.
