Delicious Spanakopita

Instructions

  1. Preheat oven to 180°C (356°F).
  2. In a small bowl, whisk together 1 egg, milk, vegetable oil, water, and 1 teaspoon salt until combined.
  3. Lay out one sheet of filo dough on a clean surface. Brush or pour a small amount of the egg-milk mixture evenly over the sheet. Repeat for a total of three layers.
  4. In a separate bowl, combine cooked spinach and crumbled feta cheese. Season with salt and pepper. Spread the spinach-feta mixture evenly over the layered filo.
  5. Roll the layered filo from one end to the other to form a long strip. Cut the strip into triangle portions.
  6. Place triangles on a baking sheet. Brush each triangle with the remaining egg yolk. Sprinkle with poppy seeds if desired.
  7. Bake in the preheated oven for 15 minutes, or until golden brown and crisp.
  8. Allow to cool slightly before serving. Enjoy warm.
