Instructions
- Preheat oven to 180°C (356°F).
- In a small bowl, whisk together 1 egg, milk, vegetable oil, water, and 1 teaspoon salt until combined.
- Lay out one sheet of filo dough on a clean surface. Brush or pour a small amount of the egg-milk mixture evenly over the sheet. Repeat for a total of three layers.
- In a separate bowl, combine cooked spinach and crumbled feta cheese. Season with salt and pepper. Spread the spinach-feta mixture evenly over the layered filo.
- Roll the layered filo from one end to the other to form a long strip. Cut the strip into triangle portions.
- Place triangles on a baking sheet. Brush each triangle with the remaining egg yolk. Sprinkle with poppy seeds if desired.
- Bake in the preheated oven for 15 minutes, or until golden brown and crisp.
- Allow to cool slightly before serving. Enjoy warm.
