Delicious Beef Stew

Directions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Sear the beef cubes on all sides until nicely browned, then transfer to a plate and set aside.
  2. In the same pot, add the chopped onions and cook for a few minutes, stirring often. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Pour in the beer and beef broth, then stir in Worcestershire sauce, tomato paste, paprika, thyme, salt, pepper, and sugar. Mix well to combine.
  4. Return the beef cubes to the pot, cover, and simmer gently over low heat for 2 hours, until the meat is tender and flavorful.
  5. About 30 minutes before the end of cooking, add the sliced carrots and cubed potatoes. Continue simmering until vegetables are tender and the sauce has thickened slightly.
  6. Taste and adjust seasoning if needed. Serve hot with crusty bread or rice for a complete, comforting meal.
