Directions
- In a large pot or Dutch oven, heat olive oil over medium heat. Sear the beef cubes on all sides until nicely browned, then transfer to a plate and set aside.
- In the same pot, add the chopped onions and cook for a few minutes, stirring often. Add the minced garlic and sauté for an additional minute until fragrant.
- Pour in the beer and beef broth, then stir in Worcestershire sauce, tomato paste, paprika, thyme, salt, pepper, and sugar. Mix well to combine.
- Return the beef cubes to the pot, cover, and simmer gently over low heat for 2 hours, until the meat is tender and flavorful.
- About 30 minutes before the end of cooking, add the sliced carrots and cubed potatoes. Continue simmering until vegetables are tender and the sauce has thickened slightly.
- Taste and adjust seasoning if needed. Serve hot with crusty bread or rice for a complete, comforting meal.
