Directions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. Wash the cauliflower thoroughly, remove any leaves, and cut it into medium-sized florets. Try to keep them roughly the same size so they cook evenly.
  3. In a large bowl, combine olive oil, salt, pepper, garlic powder, smoked paprika, and turmeric. Stir well to create a fragrant seasoning.
  4. Add the cauliflower florets to the bowl and toss them until evenly coated. Each piece should glisten with the spice mixture.
  5. Spread the seasoned florets in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping once halfway through, until golden brown and crisp on the edges.
  6. If using Parmesan, sprinkle it over the cauliflower during the last 5 minutes of baking to form a delicious savory crust.
  7. While the cauliflower bakes, whisk together Greek yogurt, lemon juice, honey, and herbs in a small bowl for the sauce. Chill until ready to serve.
  8. Transfer the cauliflower to a serving platter and drizzle with the yogurt sauce or serve it on the side for dipping.
