Directions
- Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with olive oil.
- Wash the cauliflower thoroughly, remove any leaves, and cut it into medium-sized florets. Try to keep them roughly the same size so they cook evenly.
- In a large bowl, combine olive oil, salt, pepper, garlic powder, smoked paprika, and turmeric. Stir well to create a fragrant seasoning.
- Add the cauliflower florets to the bowl and toss them until evenly coated. Each piece should glisten with the spice mixture.
- Spread the seasoned florets in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping once halfway through, until golden brown and crisp on the edges.
- If using Parmesan, sprinkle it over the cauliflower during the last 5 minutes of baking to form a delicious savory crust.
- While the cauliflower bakes, whisk together Greek yogurt, lemon juice, honey, and herbs in a small bowl for the sauce. Chill until ready to serve.
- Transfer the cauliflower to a serving platter and drizzle with the yogurt sauce or serve it on the side for dipping.
