Ingredients
Vegetables & Herbs:
- 4 small russet potatoes, peeled and diced (about 600 g)
- 1 small white or yellow onion, chopped
- 1 cup (120 g) shredded carrots
- 1/2 cup (80 g) corn, optional
- 1/2 cup (50 g) diced celery
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
Soup Base & Dairy:
- 3 cups (720 ml) chicken broth
- 3 tablespoons (45 g) butter
- 2 tablespoons (15 g) all-purpose flour
- 2 cups (480 ml) milk (2% recommended)
Protein & Cheese:
- 1 pound (450 g) lean ground beef
- 1 package (16 oz / 450 g) Velveeta processed cheese, cubed OR 2 cups (200 g) shredded cheddar cheese
Seasoning:
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
