Perfect for chilly Fall and Winter days, this soup is filling, flavorful, and made easy with the slow cooker. Ingredients

Vegetables & Herbs:

  • 4 small russet potatoes, peeled and diced (about 600 g)
  • 1 small white or yellow onion, chopped
  • 1 cup (120 g) shredded carrots
  • 1/2 cup (80 g) corn, optional
  • 1/2 cup (50 g) diced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley

Soup Base & Dairy:

  • 3 cups (720 ml) chicken broth
  • 3 tablespoons (45 g) butter
  • 2 tablespoons (15 g) all-purpose flour
  • 2 cups (480 ml) milk (2% recommended)

Protein & Cheese:

  • 1 pound (450 g) lean ground beef
  • 1 package (16 oz / 450 g) Velveeta processed cheese, cubed OR 2 cups (200 g) shredded cheddar cheese

Seasoning:

  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
