Crockpot Broccoli Cheddar Soup

Directions

  1. Spray your crockpot with non-stick cooking spray.
  2. Add broccoli, carrot, onion, and garlic to the crockpot. Pour in the broth.
  3. Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the vegetables are tender.
  4. Optional: For a smoother soup, use an immersion blender to partially or fully puree the soup to your desired texture.
  5. In a small bowl, whisk together half-and-half (or milk) and flour until smooth. Stir into the crockpot.
  6. Add shredded cheddar cheese gradually, stirring until fully melted and combined.
  7. Season with salt, black pepper, and nutmeg (if using). Taste and adjust seasoning as needed.
  8. Serve hot, garnished with extra cheddar or a sprinkle of paprika if desired.
