Directions
- Spray your crockpot with non-stick cooking spray.
- Add broccoli, carrot, onion, and garlic to the crockpot. Pour in the broth.
- Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the vegetables are tender.
- Optional: For a smoother soup, use an immersion blender to partially or fully puree the soup to your desired texture.
- In a small bowl, whisk together half-and-half (or milk) and flour until smooth. Stir into the crockpot.
- Add shredded cheddar cheese gradually, stirring until fully melted and combined.
- Season with salt, black pepper, and nutmeg (if using). Taste and adjust seasoning as needed.
- Serve hot, garnished with extra cheddar or a sprinkle of paprika if desired.
