Step 1: Season the Brisket
Pat the brisket dry with paper towels. In a small bowl, mix salt, black pepper, paprika, garlic powder, and onion powder. Rub the seasoning generously over all sides of the brisket, pressing it into the meat.

In a bowl, whisk together beef broth, barbecue sauce (or ketchup), Worcestershire sauce, brown sugar, and apple cider vinegar. Pour the mixture over the brisket. Add bay leaves.
Step 6: Slow Cook
Cover and cook on low for 8–10 hours or on high for 5–6 hours, until the brisket is fork-tender and easily pulls apart.
Step 7: Rest the Meat
Carefully remove the brisket from the crockpot and let it rest for 10–15 minutes. This allows the juices to redistribute, keeping the meat moist.
Step 8: Slice or Shred
Slice the brisket against the grain for tender slices, or shred it using two forks for sandwiches or bowls.
Step 9: Reduce the Sauce (Optional)
If desired, transfer the cooking liquid to a saucepan and simmer for 10–15 minutes until thickened. Spoon over the brisket before serving.
