Directions
- Pat the pork loin dry with paper towels. In a small bowl, combine salt, paprika, onion powder, and black pepper. Rub the seasoning all over the pork.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sear the pork for a couple of minutes on each side until golden brown. Remove from heat.
- In a blender or food processor, combine the remaining olive oil, balsamic vinegar, and garlic. Blend until thickened. Add Italian seasoning and pulse briefly to combine.
- Pour the chicken broth into the insert of your slow cooker. Place the pork loin, fat side up, in the slow cooker. Brush the balsamic garlic glaze all over the pork.
- Cover and cook on LOW for 4–5 hours or on HIGH for 3 hours.
- Check doneness with an instant-read thermometer; pork is done when the internal temperature reaches 145°F (63°C).
- Remove pork from the slow cooker and transfer to a cutting board. Tent with foil and let rest for 15 minutes.
- Slice the pork loin and serve with your favorite sides.
