Creamy Lime and White Chocolate

Instructions

  1. Combine liquids and chocolate:
    • In a medium saucepan, combine lime zest, milk, lime juice, full cream, white chocolate, and sugar.
    • Heat gently over medium heat, stirring constantly until the white chocolate is fully melted and the mixture is smooth.
  2. Thicken the mixture:
    • Gradually add the cornstarch while stirring.
    • Continue to heat over medium heat, stirring constantly, until the mixture thickens to the consistency of pastry cream.
  3. Finish with mascarpone:
    • Remove from heat.
    • Stir in the mascarpone until fully incorporated and smooth.
  4. Set the dessert:
    • Pour the mixture into a mold or serving dishes.
    • Cover and refrigerate overnight to fully set.

Tips:

  • For extra lime flavor, sprinkle a little lime zest on top before serving.
  • Serve chilled, optionally with crushed biscuits or meringue for added texture.
