Directions
- In a small bowl, sprinkle gelatin over water and let bloom for 5 minutes.
- Heat the heavy cream in a saucepan over medium heat until it begins to simmer. Remove from heat and add chopped white chocolate. Stir until completely melted and smooth. Mix in vanilla extract.
- Pour the white chocolate mixture into serving glasses or a prepared dessert mold. Chill in the refrigerator for 30–45 minutes until slightly set.
- In a small saucepan, combine lime juice, lime zest, and sugar. Heat gently until the sugar dissolves. Remove from heat and stir in the bloomed gelatin until fully dissolved. Allow to cool slightly.
- Carefully pour the lime mixture over the chilled white chocolate layer. Return to the refrigerator and chill for at least 2 hours, or until fully set.
- Just before serving, garnish with whipped cream, lime zest, or white chocolate shavings as desired.
