Creamy Herb Chicken

Instructions

  1. Prep the Chicken: Sprinkle the chicken slices with salt, pepper, and Italian seasoning. Dredge lightly in flour to create a thin coating.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken slices for 2–3 minutes per side until golden brown. Remove from skillet and set aside.
  3. Deglaze and Season: Pour chicken broth into the skillet. Use a silicone spatula to scrape up any brown bits from the bottom of the pan. Bring the broth to a gentle boil, then reduce heat to a simmer.
  4. Make the Creamy Sauce: Stir in the cream of chicken soup, sour cream, milk, and lemon juice until smooth and fully combined. Allow the sauce to bubble gently for a few minutes.
  5. Combine Chicken and Sauce: Return the chicken to the skillet and spoon the creamy sauce over each piece. Simmer for 5 minutes, or until the chicken is heated through.
  6. Optional Bacon Addition: For extra richness, cook bacon low and slow, reserve drippings, and use them to sear the chicken. Roughly chop cooked bacon and sprinkle on top before serving.
  7. Garnish and Serve: Sprinkle fresh parsley over the top and serve immediately with your choice of sides.
