Creamy and Well Vanilla Flan (French-Style Vanilla Custard Tart)

Directions

  1. In a medium saucepan, combine milk, cream, and half of the sugar. Heat gently over medium heat until warm but not boiling.
  2. If using a vanilla bean, scrape seeds into the milk mixture and add the pod.
  3. In a separate bowl, whisk egg yolks, remaining sugar, and cornstarch until smooth.
  4. Slowly pour about half of the warm milk mixture into the yolk mixture, whisking constantly to temper the eggs.
  5. Pour the egg mixture back into the saucepan with the remaining milk mixture.
  6. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  7. Remove from heat, discard the vanilla bean pod if used, and stir in vanilla extract if using.
  8. Pour into individual serving dishes or a large bowl. Chill in the refrigerator for at least 2 hours.
  9. Garnish with berries, a sprinkle of cinnamon, or shaved chocolate before serving.
