Directions
- In a medium saucepan, combine milk, cream, and half of the sugar. Heat gently over medium heat until warm but not boiling.
- If using a vanilla bean, scrape seeds into the milk mixture and add the pod.
- In a separate bowl, whisk egg yolks, remaining sugar, and cornstarch until smooth.
- Slowly pour about half of the warm milk mixture into the yolk mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the saucepan with the remaining milk mixture.
- Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat, discard the vanilla bean pod if used, and stir in vanilla extract if using.
- Pour into individual serving dishes or a large bowl. Chill in the refrigerator for at least 2 hours.
- Garnish with berries, a sprinkle of cinnamon, or shaved chocolate before serving.
