Cornmeal Cheese Donuts

Directions

  1. In a large bowl, combine the eggs, milk, grated cheese, chopped parsley, and salt. Beat until the mixture is smooth and well combined.
  2. Sift in the cornmeal and baking powder. Mix with a spoon until a rough dough forms, then knead gently with your hands until the dough is smooth and pliable.
  3. Transfer the dough to a lightly floured surface to prevent sticking. Roll out the dough with a rolling pin to about 1–1.5 cm (1/2 inch) thickness.
  4. Use a cookie cutter or round glass to cut out circles for your donuts. Gather any leftover dough, re-roll, and cut additional circles.
  5. Heat a small amount of vegetable oil in a saucepan over low heat. Place the donuts in the pan, cover with a lid, and cook slowly on the lowest setting. Turn occasionally until golden brown and cooked through, about 10–15 minutes depending on size.
  6. Remove the donuts from the oil and drain on paper towels. Serve warm.
