Condensed Milk Dinner Rolls

Instructions

  1. Sift the flour through a fine mesh sieve into a large mixing bowl. Add yeast and salt, mixing to combine.
  2. Using a dough hook on a stand mixer, add the egg, milk, and condensed milk on slow speed. Mix until a sticky dough forms, about 1 minute. Scrape down the sides as needed.
  3. Increase the speed to medium-low and add butter, one cube at a time. Continue mixing until the butter is fully incorporated.
  4. Mix until the dough is smooth and elastic, about 2 minutes, making sure no dry flour remains on the bottom of the bowl.
  5. Transfer the dough to a lightly greased bowl and knead by hand to form a smooth round ball. Turn the dough seam side down, cover with plastic wrap, and let rise until doubled in size, about 1.5–2 hours.
  6. Grease a baking pan with butter. Punch down the risen dough and transfer to a lightly floured counter. Divide the dough into 9 equal pieces.
  7. Working with one piece at a time (cover the rest), stretch and shape the dough into a smooth ball, pinching the edges at the bottom. Place seam side down in the prepared pan. Repeat with remaining dough.
  8. Lightly cover the rolls with plastic wrap and let rise again until nearly doubled, making sure they don’t exceed the pan’s rim. Preheat the oven to 340°F (170°C).
  9. Gently brush the rolls with the egg wash and bake for 25–30 minutes, rotating the pan halfway. The rolls should be a deep or bright golden brown.
  10. Remove from oven and cool for 5 minutes. Brush a layer of condensed milk glaze over the warm rolls. Let cool another 30–60 minutes before serving. Serve warm or at room temperature.
