Instructions
- Sift the flour through a fine mesh sieve into a large mixing bowl. Add yeast and salt, mixing to combine.
- Using a dough hook on a stand mixer, add the egg, milk, and condensed milk on slow speed. Mix until a sticky dough forms, about 1 minute. Scrape down the sides as needed.
- Increase the speed to medium-low and add butter, one cube at a time. Continue mixing until the butter is fully incorporated.
- Mix until the dough is smooth and elastic, about 2 minutes, making sure no dry flour remains on the bottom of the bowl.
- Transfer the dough to a lightly greased bowl and knead by hand to form a smooth round ball. Turn the dough seam side down, cover with plastic wrap, and let rise until doubled in size, about 1.5–2 hours.
- Grease a baking pan with butter. Punch down the risen dough and transfer to a lightly floured counter. Divide the dough into 9 equal pieces.
- Working with one piece at a time (cover the rest), stretch and shape the dough into a smooth ball, pinching the edges at the bottom. Place seam side down in the prepared pan. Repeat with remaining dough.
- Lightly cover the rolls with plastic wrap and let rise again until nearly doubled, making sure they don’t exceed the pan’s rim. Preheat the oven to 340°F (170°C).
- Gently brush the rolls with the egg wash and bake for 25–30 minutes, rotating the pan halfway. The rolls should be a deep or bright golden brown.
- Remove from oven and cool for 5 minutes. Brush a layer of condensed milk glaze over the warm rolls. Let cool another 30–60 minutes before serving. Serve warm or at room temperature.
