½ cup boiling water
1 cup + 3 tbsp butter or margarine, softened
2¼ cups sugar
1 tsp vanilla extract
4 eggs
2 cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 cup buttermilk (or sour milk: 1 tbsp vinegar + milk to make 1 cup)
Pecan halves (optional, for decoration)
Coconut Pecan Frosting:
1 can (14 oz) sweetened condensed milk
3 egg yolks, slightly beaten
½ cup (1 stick) butter or margarine
1 tsp vanilla extract
1⅓ cups sweetened coconut flakes
1 cup pecans, chopped
