Coconut Alfajores

Directions

  1. In a large bowl, combine grated coconut and sugar. Mix well.
  2. Add egg whites and vanilla extract. Stir until a smooth, homogeneous mixture forms.
  3. Gradually add cornstarch and continue mixing until fully incorporated.
  4. Take small portions of dough and roll into balls. Flatten each ball into a disc shape.
  5. Arrange the discs on a greased baking sheet or one lined with parchment paper.
  6. Preheat oven to 350°F (180°C). Bake discs for 15–20 minutes, or until golden.
  7. Remove from oven and allow discs to cool completely.
  8. Spread a layer of dulce de leche on the bottom of one disc, then sandwich with another disc to form the alfajor.
  9. Roll the edges in extra grated coconut to decorate. Serve and enjoy!
