Directions
- In a large bowl, combine grated coconut and sugar. Mix well.
- Add egg whites and vanilla extract. Stir until a smooth, homogeneous mixture forms.
- Gradually add cornstarch and continue mixing until fully incorporated.
- Take small portions of dough and roll into balls. Flatten each ball into a disc shape.
- Arrange the discs on a greased baking sheet or one lined with parchment paper.
- Preheat oven to 350°F (180°C). Bake discs for 15–20 minutes, or until golden.
- Remove from oven and allow discs to cool completely.
- Spread a layer of dulce de leche on the bottom of one disc, then sandwich with another disc to form the alfajor.
- Roll the edges in extra grated coconut to decorate. Serve and enjoy!
