Step 1: Prepare the Peppers
Remove the tops and seeds from the bell peppers. Parboil the peppers in boiling water for 5 minutes, then drain and set aside. This softens them slightly and ensures they bake evenly.
Step 2: Cook the Beef and Onion
In a skillet, combine the ground beef and chopped onion. Cook over medium heat until the beef is browned and the onion is tender. Drain any excess fat and set aside.
Step 3: Prepare the Rice
Cook the Rice-A-Roni according to package directions, using the canned diced tomatoes as part of the liquid if instructed. Once the rice is cooked, combine it with the cooked beef and onion mixture.
Step 4: Stuff the Peppers
Place the parboiled peppers upright in a baking dish. Fill each pepper generously with the beef and rice mixture.
Step 5: Add Tomato Sauce
Mix the sugar into the tomato sauce. Pour the sauce around the peppers in the baking dish, making sure not to cover the tops.
Step 6: Bake
Cover the baking dish and bake in a preheated oven at 350°F (175°C) for 35 minutes.
Step 7: Add Cheese
Remove the cover and sprinkle shredded cheese over each stuffed pepper. Bake uncovered for an additional 5 minutes, or until the cheese is melted and slightly golden.
Step 8: Serve
Serve the stuffed peppers hot with the tomato sauce from the baking dish. Enjoy the combination of tender peppers, savory meat, flavorful rice, and melty cheese.
