Classic Pizza Calzone

Directions

  1. In a small bowl, dissolve sugar in warm water. Sprinkle yeast over the top and let it sit for 5–10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let rise for 1–1.5 hours, or until doubled in size.
  4. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  5. Punch down the dough and divide it into 4 equal portions. Roll each portion into a circle, about 8 inches (20 cm) in diameter.
  6. Spread a thin layer of pizza sauce over half of each dough circle, leaving a 1-inch (2.5 cm) border. Layer on mozzarella, Parmesan, meats, and vegetables if using.
  7. Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, then crimp with a fork.
  8. Brush the tops with beaten egg and sprinkle with dried oregano or Italian seasoning.
  9. Bake for 15–20 minutes, or until golden brown. Remove from the oven and let cool for 5 minutes before slicing.
  10. Serve warm with extra marinara sauce for dipping.
