Directions
- Preheat oven to 190°C (374°F).
- In a large non-stick skillet, combine the chopped onions and Italian dressing. Cook over medium heat for 8–10 minutes until the onions are golden brown, stirring constantly. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the lean beef, cooled onion mixture, 1/4 cup of ketchup, stuffing mix, water, and egg whites. Mix well until thoroughly combined.
- Shape the mixture into a 10x5-inch loaf and place it in a 13x9-inch baking dish sprayed with cooking spray. Spread the remaining 1/2 cup of ketchup evenly over the top.
- Bake for 51–61 minutes, or until the meatloaf is cooked through and the internal temperature reaches 71°C (160°F).
- Remove from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven for an additional 2 minutes, or until the cheese is melted and bubbly.
- Allow the meatloaf to rest for 5 minutes before slicing. Serve warm with your favorite sides.
