Ingredients

  • ¼ cup (50 g) granulated sugar
  • 2 tablespoons (28 g) unsalted butter

  • 1 large egg

Filling:

  • ⅓ cup (70 g) dark brown sugar
  • ⅓ cup (67 g) granulated sugar
  • 2 tablespoons (16 g) all-purpose flour
  • 1 tablespoon (8 g) ground cinnamon
  • 6 tablespoons (85 g) unsalted butter, softened to 67–70°F (19–21°C)

Glaze:

  • 2 cups (240 g) powdered sugar
  • ¼ cup (60 ml) whole milk, warmed to 80–100°F (27–38°C)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon (5 ml) lemon juice
