Directions

  1. Preheat your oven to 175°C (350°F). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving a bit of overhang for easy removal.
  2. In a large bowl, combine the rolled oats, flour, cocoa powder, baking soda, and salt. Stir to evenly distribute the dry ingredients.
  3. In a separate bowl, whisk together the melted butter and brown sugar until smooth and glossy. Add the egg, vanilla extract, and milk, mixing until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until you have a thick, slightly sticky batter. It should hold together when pressed but not be runny.
  5. Fold in the chocolate chips, nuts, and dried fruit if using, ensuring they’re evenly distributed throughout the batter.
  6. Transfer the batter to the prepared baking pan, pressing it down evenly with a spatula or your hands. The surface should be smooth and slightly compacted.
  7. Bake in the preheated oven for 25–30 minutes, or until the edges are firm and a toothpick inserted into the center comes out with just a few moist crumbs. The center should remain slightly soft for that perfect chewy texture.
  8. Remove from the oven and allow to cool in the pan for 10–15 minutes. Then lift the bars out using the parchment overhang and transfer to a wire rack to cool completely.
  9. Once cooled, cut into squares or rectangles of your preferred size. For cleaner edges, use a sharp knife warmed under hot water and wiped dry.
