Chicken and Potatoes
- ¼ cup (60 ml) olive oil
- 4 chicken thighs with skin and bone (about 1.5 lb / 680 g)
- Salt and freshly ground black pepper, to taste
- 1 lb (450 g) potatoes, cut into chunks (small red-skinned potatoes recommended)
- 4–5 garlic cloves, thinly sliced
- ½ cup (120 ml) dry white wine
- ½ cup (120 ml) chicken stock
- 2 tablespoons (28 g) salted butter
- ½ tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon crushed red pepper flakes (optional)
- ⅔ cup (100 g) fresh or thawed frozen peas

- Fresh parsley, chopped
- Fresh lemon juice
