Chicken Stuffed Croissants

Instructions

  1. Prepare the chicken filling. In a medium bowl, combine shredded chicken, mayonnaise, red onion, celery, Dijon mustard, salt, and pepper. Mix until well incorporated.
  2. Slice the croissants. Cut each croissant horizontally, but do not slice all the way through. Leave a hinge so the filling stays inside.
  3. Layer the lettuce. Place a few fresh lettuce leaves on the bottom half of each croissant.
  4. Add the chicken mixture. Spoon the chicken filling evenly over the lettuce in each croissant.
  5. Close and serve. Gently press the croissant to secure the filling. Serve immediately or wrap in parchment paper for an on-the-go meal.
