Chicken Philly Cheesesteak

Directions

  1. Cook Chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until no longer pink, about 5–7 minutes. Remove chicken from the skillet and set aside.
  2. Sauté Vegetables: Add the remaining tablespoon of olive oil to the skillet. Sauté the onions and green bell peppers until tender, about 5–7 minutes.
  3. Combine: Return the chicken to the skillet, stir to combine with the peppers and onions, and season with salt and pepper to taste.
  4. Prep Rolls: Preheat the oven to 350°F (175°C). Cut the hoagie rolls in half lengthwise and place them on a baking sheet. Toast for 3–5 minutes until lightly crisp.
  5. Assemble Sandwiches: Remove rolls from the oven. Divide the chicken and pepper mixture evenly among the rolls. Place a slice of provolone cheese on top of each sandwich.
  6. Melt Cheese: Return the baking sheet to the oven and broil until the cheese is melted and bubbly, about 2–3 minutes.
  7. Add Toppings: Remove from the oven and add any optional toppings such as mushrooms, jalapeños, banana peppers, or hot sauce.
