Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts (about 1½ lb / 680 g), pounded to even thickness
- Salt and black pepper, to taste
- 1 cup (125 g / 4.4 oz) all-purpose flour
- 2 large eggs, beaten
- 1½ cups (150 g / 5.3 oz) Italian-style breadcrumbs
- ½ cup (50 g / 1.8 oz) grated Parmesan cheese
- ½ teaspoon (1 g) garlic powder
- ½ teaspoon (1 g) dried oregano
- ¼ cup (60 ml) olive oil, for frying
For the Topping
- 2 cups (480 ml / about 16 oz) marinara sauce
- 1½ cups (150 g / 5 oz) shredded mozzarella cheese
- ¼ cup (25 g) grated Parmesan cheese
- 2 tablespoons (8 g) fresh basil or parsley, chopped (optional)
