Chicken and Dumpling Casserole

Directions

  1. Preheat oven to 190°C (375°F). Grease a 9×13-inch (23×33 cm) baking dish.
  2. In a large bowl, combine cooked chicken, cream of chicken soup, chicken broth, milk, peas and carrots, onion, garlic, thyme, salt, and pepper. Stir until well combined.
  3. Pour the chicken mixture into the prepared baking dish, spreading it evenly.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Stir in milk and melted butter until just combined; the batter will be slightly lumpy.
  5. Drop spoonfuls of the dumpling batter evenly over the chicken mixture.
  6. Bake for 30–35 minutes, or until dumplings are golden brown and cooked through.
  7. Remove from oven and allow to cool a few minutes; the sauce will thicken as it rests.
  8. Serve hot and enjoy!
