Cheesy Taco Soup

Instructions

Stovetop Version:

  1. In a large saucepan over medium-high heat, brown the meat. Drain excess grease.
  2. Add taco seasoning, undrained tomatoes, green chilies, tomato paste, beef broth, and chopped peppers; stir to combine.
  3. Reduce heat to medium-low and simmer uncovered for ~20 minutes, until the tomato liquid thickens.
  4. Just before serving, stir in cream cheese and cream until melted and smooth.

Slow Cooker Version:

  1. Brown the meat as directed, drain excess grease, and transfer to a slow cooker.
  2. Add taco seasoning, undrained tomatoes, tomato paste, beef broth, green chilies, and peppers; stir well.
  3. Cook on low for 6–8 hours.
  4. Stir in cream cheese and cream just before serving until fully combined.
