Cheesy Stuffed Meatloaf Bites

Directions

  1. Preheat the oven.
Set your oven to 200°C (400°F) and line a baking sheet with parchment paper. This prevents sticking and helps the bites brown evenly.
  2. Prepare the meat mixture.
In a large mixing bowl, combine ground beef, chopped onion, garlic, breadcrumbs, beaten egg, milk, Worcestershire sauce, salt, black pepper, and Italian herbs. Mix gently until just combined—overmixing can make the meat tough.
  3. Form the meatloaf bites.
Take a small handful of the meat mixture (about 2 tablespoons), flatten it slightly in your palm, and place a cube of mozzarella and cheddar in the center. Wrap the meat around the cheese and roll into a tight ball, ensuring the cheese is fully enclosed. Repeat until all the mixture is used.
  4. Arrange on baking sheet.
Place the stuffed meatloaf bites on the prepared sheet, spacing them about 2 cm (1 inch) apart so they cook evenly.
  5. Optional topping glaze.
In a small bowl, mix ketchup, Dijon mustard, and brown sugar. Brush a small amount on top of each meatloaf bite for a lightly sweet, tangy finish.
  6. Bake until golden.
Bake in the preheated oven for 20–25 minutes, or until the meat is cooked through (internal temperature should reach 74°C / 165°F) and the tops are lightly browned. The cheese inside will be melty and delicious.
  7. Cool slightly before serving.
Let the bites rest for 5 minutes before serving. This helps the cheese set slightly so it doesn’t ooze out too much when bitten.

Serving Suggestions

Serve warm with a simple green salad or roasted vegetables for a balanced meal. They also pair beautifully with mashed potatoes or a side of roasted sweet potatoes. For gatherings, offer a small bowl of marinara or ranch dip for dipping the cheesy bites—kids and adults alike will love it.

Storage Tips

Cool leftovers completely and store in an airtight container. Refrigerate for up to 3 days. Reheat in a 180°C (350°F) oven for 5–10 minutes or microwave on medium power for 1–2 minutes. For longer storage, freeze the uncooked bites on a tray, then transfer to a freezer-safe bag for up to 1 month. Bake from frozen, adding a few extra minutes to the cooking time.
