- In a large mixing bowl, combine the ground meat, bread crumbs (if using), grated onion, salt, and pepper. Mix gently until just combined—overmixing can make the meatloaf tough.
- Take half of the meat mixture and shape it into a loaf directly on the prepared baking sheet, creating a flat, even base.
- Lay the cheese sticks evenly on top of the first meat layer, leaving a small space at each end so the cheese stays inside.
- Cover the cheese sticks with the remaining meat mixture and shape it into a loaf, making sure the edges are sealed so the cheese won’t leak out.
- Spread the ketchup evenly over the top of the meatloaf for a glossy, flavorful finish.
- Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C) for beef or 165°F (74°C) for turkey.
- Remove from the oven and let it rest for 5–10 minutes before slicing. This helps the meatloaf hold its shape and prevents the cheese from spilling out.
