Cheese Potato & Smoked Sausage Casserole

Instructions

  1. Prepare the Sausage
    Slice the smoked sausage in half lengthwise, then cut into ½-inch half-moon pieces.
  2. Cook the Sausage
    Heat a skillet (preferably cast iron) over medium heat and cook the sausage for about 15 minutes, stirring occasionally until lightly browned.
  3. Prepare the Potatoes
    Place the boiled and diced potatoes into a 2-quart casserole dish or baking dish.
  4. Add the Sausage
    Add the cooked sausage to the potatoes and gently mix them together.
  5. Make the Cheese Sauce
    In a saucepan over medium heat, combine butter and flour and whisk together to form a smooth paste. Slowly add the milk while whisking continuously.
  6. Add the Cheese and Seasoning
    Stir in the Velveeta cheese cubes, salt, and black pepper. Continue whisking until the cheese is melted and the sauce becomes smooth and creamy.
  7. Combine the Casserole
    Pour the warm cheese sauce over the potatoes and sausage mixture, making sure everything is evenly coated.
  8. Add Toppings
    Sprinkle the shredded sharp cheddar cheese evenly over the top. Lightly sprinkle paprika for color and flavor.
  9. Bake
    Place the casserole in a preheated oven at 350°F (175°C) and bake for 35–45 minutes, or until the top is golden and bubbly.
  10. Serve
    Remove from the oven and allow it to rest for a few minutes before serving.
