- Prepare the Sausage
Slice the smoked sausage in half lengthwise, then cut into ½-inch half-moon pieces. - Cook the Sausage
Heat a skillet (preferably cast iron) over medium heat and cook the sausage for about 15 minutes, stirring occasionally until lightly browned. - Prepare the Potatoes
Place the boiled and diced potatoes into a 2-quart casserole dish or baking dish. - Add the Sausage
Add the cooked sausage to the potatoes and gently mix them together. - Make the Cheese Sauce
In a saucepan over medium heat, combine butter and flour and whisk together to form a smooth paste. Slowly add the milk while whisking continuously. - Add the Cheese and Seasoning
Stir in the Velveeta cheese cubes, salt, and black pepper. Continue whisking until the cheese is melted and the sauce becomes smooth and creamy. - Combine the Casserole
Pour the warm cheese sauce over the potatoes and sausage mixture, making sure everything is evenly coated. - Add Toppings
Sprinkle the shredded sharp cheddar cheese evenly over the top. Lightly sprinkle paprika for color and flavor. - Bake
Place the casserole in a preheated oven at 350°F (175°C) and bake for 35–45 minutes, or until the top is golden and bubbly. - Serve
Remove from the oven and allow it to rest for a few minutes before serving.
