π Ingredients
Meat:
- 6 chicken thighs (bone-in, skin-on)
Produce:
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 green onions, chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 medium tomato, diced
- 1 Scotch bonnet pepper, finely chopped (seeds removed for less heat)
- Β½ cup frozen peas
- 1 tsp garlic powder
- Β½ tsp onion powder
- 2 tsp fresh thyme (or 1 tsp dried)
- 1 small bunch fresh cilantro, chopped (for garnish)
Canned Goods:
- 1 Β½ cups chicken broth
- 1 cup coconut milk
Pasta & Grains:
- 1 Β½ cups long-grain white rice (preferably rinsed)
Baking & Spices:
- 2 tsp ground allspice
- 1 tsp black pepper
- 3 tsp salt (divided; adjust to taste)
- 1 tsp paprika
- 1 tsp smoked paprika
Oils & Vinegars:
- 2 tbsp vegetable oil
