Instructions
- Preheat the oven to 180°C (350°F) and grease a 9×13-inch baking dish.
- In a medium skillet, melt the butter over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook 5–7 minutes until the apples are soft but not mushy. Remove from heat and let cool slightly.
- In a mixing bowl, combine ricotta cheese, mozzarella cheese, and vanilla extract until smooth.
- Lay the cooked lasagna noodles flat on a clean surface. Spread a thin layer of the cheese mixture over each noodle, then top with a spoonful of the apple mixture.
- Roll each noodle tightly and place seam-side down in the prepared baking dish.
- Drizzle caramel sauce over the top of the rolls and sprinkle with chopped nuts, if using.
- Bake 20–25 minutes until the rolls are heated through and the cheese is melted.
- Remove from oven, let cool slightly, then serve warm.
