Ingredients

For the eggs

  • 6 large eggs
  • 3 tbsp mayonnaise (45 g)
  • 1 tsp Dijon mustard (5 ml)
  • 1 tsp Cajun seasoning (plus extra for sprinkling)
  • ½ tsp smoked paprika (1 g)
  • 1 tsp lemon juice (5 ml)
  • Salt & pepper, to taste

For the topping

  • 6 medium shrimp, peeled and deveined (90 g)
  • 2 small smoked sausages (or andouille), sliced thin (100 g)
  • ½ tbsp olive oil or butter (7 g / 7 ml)
  • ½ tsp Cajun seasoning (1 g)
  • Fresh parsley or chives, chopped (2 g) for garnish
