Butterscotch Graham Cracker Cheesecake Bars

Instructions:
1. Begin by preheating your oven to 325°F (163°C). Prepare a 9x9-inch baking pan by lining it with parchment paper, allowing some overhang for easy removal later.

2. In a medium bowl, mix together the graham cracker crumbs, melted butter, and brown sugar until well combined. Press this mixture firmly into the bottom of the prepared baking pan to form a solid crust.

3. In another mixing bowl, beat the softened cream cheese with an electric mixer until it becomes smooth and creamy. Add the granulated sugar, eggs, and vanilla extract, mixing until the batter is perfectly blended and creamy.

4. Pour the cream cheese mixture over the crust in the baking pan, spreading it evenly to ensure every bite is delicious.

5. Bake the bars in the preheated oven for about 35-40 minutes, or until the center is set and the edges are slightly golden. Once cooked, remove them from the oven and let them cool completely in the pan on a wire rack.

6. In a microwave-safe bowl, add the butterscotch chips and heavy cream. Microwave in 30-second intervals, stirring between each interval, until the mixture is smooth and fully melted.

7. Carefully pour the melted butterscotch topping over the cooled cheesecake layer, spreading it evenly with a spatula.

8. Once topped, cover the bars with plastic wrap and refrigerate for at least 3 hours to set; this will help them slice into perfect bars.
