Brown Sugar Cookies

Directions

  1. Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, bicarbonate of soda, and cinnamon. Set aside.
  3. In a large bowl, cream together the butter and brown sugar until smooth and creamy.
  4. Gradually add the dry ingredients to the butter mixture, mixing until fully combined.
  5. If desired, fold in chocolate chips or nuts.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving about 5 cm (2 inches) between each cookie.
  7. Gently flatten each ball with the back of a spoon or your fingers.
  8. Bake for 10–12 minutes, or until edges are lightly golden. The centers should remain soft.
  9. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Store cooled cookies in an airtight container.
