Directions
- Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, bicarbonate of soda, and cinnamon. Set aside.
- In a large bowl, cream together the butter and brown sugar until smooth and creamy.
- Gradually add the dry ingredients to the butter mixture, mixing until fully combined.
- If desired, fold in chocolate chips or nuts.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving about 5 cm (2 inches) between each cookie.
- Gently flatten each ball with the back of a spoon or your fingers.
- Bake for 10–12 minutes, or until edges are lightly golden. The centers should remain soft.
- Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Store cooled cookies in an airtight container.
