Broccoli Mushroom Egg Scramble

Instructions

  1. Whisk the Eggs
    In a bowl, whisk together eggs, milk (if using), salt, and black pepper until well combined and slightly frothy. Set aside.
  2. Sauté the Vegetables
    Heat olive oil or butter in a non-stick skillet over medium heat. Add mushrooms and cook for 3–4 minutes until they release moisture and begin to brown.
    Add chopped broccoli and cook for another 2–3 minutes until tender but still bright green. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add the Eggs
    Reduce heat to medium-low. Pour the egg mixture over the vegetables. Let it sit for a few seconds, then gently stir with a spatula, pushing eggs from the edges toward the center.
  4. Cook Until Fluffy
    Continue gently folding and stirring until the eggs are softly set but still slightly creamy. Avoid overcooking.
  5. Finish & Serve
    Sprinkle cheese on top (if using) and allow it to melt slightly. Garnish with parsley or green onions and serve immediately.
