Broccoli & Cheddar Twice-Baked Potatoes

Instructions

  1. Preheat the oven to 400°F (200°C).
    Line a small baking tray with parchment paper and set aside.
  2. Bake the potatoes:
    Place the potatoes on a baking dish and bake for 1 hour or until tender.
    Remove from the oven and let cool slightly.
  3. Prepare the filling:
    Once cool enough to handle, cut each potato in half lengthwise.
    Scoop out the insides into a large bowl, leaving the skins intact.
    Rub the outside of each potato skin lightly with olive oil and place them back on the baking tray.
  4. Mash & mix:
    Add butter to the potato pulp and mash until fairly smooth.
    Stir in Greek yogurt, milk, salt, pepper, chives, garlic powder, onion powder, onion flakes, dill weed, paprika, half of the broccoli, and ¾ cup of cheddar cheese.
  5. Stuff & bake again:
    Spoon the filling evenly into the potato skins and sprinkle with the remaining broccoli and cheese.
    Bake for 20–25 minutes or until the cheese is melted and the potatoes are heated through.

Serve warm — crispy on the outside, creamy and cheesy inside!
