Black Bean Chopped Salad

Instructions

  1. Prepare the Dressing:
    In a small jar, combine olive oil, lime juice, minced garlic, honey, oregano, cumin, chili powder, salt, and pepper. Shake vigorously until well mixed. Alternatively, whisk together in a small bowl.
  2. Prepare the Salad:
    In a large serving bowl, add black beans, tomatoes, cucumbers, yellow and red bell peppers, red onion, avocado, and jalapeños.
  3. Combine:
    Drizzle the dressing over the salad. Gently toss to combine, making sure all ingredients are evenly coated.
  4. Serve:
    Sprinkle with minced fresh cilantro or parsley before serving. Serve immediately, or refrigerate for 15–20 minutes for flavors to meld.
