Ingredients
Soup Base:
- • 6 medium Russet potatoes, peeled and cut into bite-sized pieces (about 900 g / 2 lb)
- • 1 onion, diced (about 150 g / 1 cup)
- • 3 carrots, peeled and sliced (about 200 g / 1 ½ cups)
- • 3 stalks celery, diced (about 150 g / 1 cup)
- • 6 slices of bacon, cooked and crumbled (about 170 g / 6 oz)
- • 8 cups vegetable or chicken broth (1.9 liters)
- • Salt and pepper, to taste
- • 1 tsp minced parsley (for garnish)

- • 1 cup milk (240 ml)
- • ½ cup heavy cream (120 ml)
