Instructions
- Cook the noodles:
In a large pot of salted boiling water, cook the noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking. Set aside. - Make the sauce:
In a small bowl, whisk together soy sauce, garlic, lime juice, Sriracha, honey, and 2 tablespoons of sesame oil. Then whisk in the cornstarch until smooth. Set aside. - Cook the beef:
Heat the remaining 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the thinly sliced flank steak and sear for 3–5 minutes per side, until browned and just cooked through. - Add vegetables:
Stir in the broccoli and mushrooms along with 2 tablespoons of water. Cook for about 6 minutes, or until vegetables are tender but still crisp. - Combine everything:
Pour the sauce over the beef and vegetables, simmering for 3 minutes until slightly thickened. Reduce heat to low, then add the cooked noodles. Toss everything together until the noodles are fully coated and warmed through. - Serve:
Divide the noodles among plates and serve immediately with lime wedges for squeezing over the top.
