Beef & Broccoli Noodles

Instructions

  1. Cook the noodles:
    In a large pot of salted boiling water, cook the noodles according to package directions until al dente. Drain and rinse with cold water to prevent sticking. Set aside.
  2. Make the sauce:
    In a small bowl, whisk together soy sauce, garlic, lime juice, Sriracha, honey, and 2 tablespoons of sesame oil. Then whisk in the cornstarch until smooth. Set aside.
  3. Cook the beef:
    Heat the remaining 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the thinly sliced flank steak and sear for 3–5 minutes per side, until browned and just cooked through.
  4. Add vegetables:
    Stir in the broccoli and mushrooms along with 2 tablespoons of water. Cook for about 6 minutes, or until vegetables are tender but still crisp.
  5. Combine everything:
    Pour the sauce over the beef and vegetables, simmering for 3 minutes until slightly thickened. Reduce heat to low, then add the cooked noodles. Toss everything together until the noodles are fully coated and warmed through.
  6. Serve:
    Divide the noodles among plates and serve immediately with lime wedges for squeezing over the top.
