Directions
- Preheat your oven to 200°C (400°F) and prepare a baking dish.

- Spread half of the seasoned salt evenly in the bottom of the baking dish. Place the potatoes on top of this salt layer.
- Drizzle olive oil over the potatoes and season with salt and black pepper. Sprinkle the remaining salt mixture over the potatoes, covering them completely.
- Bake in the preheated oven for 60–75 minutes, or until the potatoes are tender when pierced with a skewer or fork.
- Remove the potatoes carefully from the oven and allow them to cool slightly.
- Cut each potato lengthwise, gently fluff the interior with a fork, and top with a dollop of sour cream and freshly chopped chives before serving.
