Directions

  1. Preheat your oven to 200°C (400°F) and prepare a baking dish.
  2. Wash the potatoes thoroughly and dry them with paper towels.
  3. In a mixing bowl, combine the coarse sea salt, chopped garlic, rosemary, and thyme.
  4. Spread half of the seasoned salt evenly in the bottom of the baking dish. Place the potatoes on top of this salt layer.
  5. Drizzle olive oil over the potatoes and season with salt and black pepper. Sprinkle the remaining salt mixture over the potatoes, covering them completely.
  6. Bake in the preheated oven for 60–75 minutes, or until the potatoes are tender when pierced with a skewer or fork.
  7. Remove the potatoes carefully from the oven and allow them to cool slightly.
  8. Cut each potato lengthwise, gently fluff the interior with a fork, and top with a dollop of sour cream and freshly chopped chives before serving.
