Step 1: Preheat the Oven

Step 2: Season the Chicken
Pat the chicken thighs dry with paper towels. Rub them with olive oil, then season evenly with salt, black pepper, paprika, and garlic powder. Arrange the thighs skin-side up in the prepared baking dish.
Step 3: Prepare the Sauce
In a medium bowl, whisk together the orange juice, orange zest, honey, soy sauce, apple cider vinegar, and herbs if using. Stir in the cranberries. The sauce should smell bright and slightly sweet with a tangy edge.
Step 4: Add Sauce to the Chicken
Pour the orange cranberry sauce evenly over and around the chicken thighs. Make sure some cranberries settle between the pieces so they soften and burst as they bake.
Step 5: Bake Covered
Cover the baking dish loosely with foil and bake for 25 minutes. This helps the chicken cook through while absorbing the citrus-cranberry flavors.
Step 6: Bake Uncovered
Remove the foil and continue baking for another 20–25 minutes, until the chicken skin is golden and crisp and the sauce has thickened slightly.
Step 7: Check for Doneness
Ensure the internal temperature of the chicken reaches 74°C (165°F). The sauce should look glossy, and the cranberries will have burst, creating a naturally thick, ruby-red glaze.
Step 8: Rest and Finish
Remove the dish from the oven and let the chicken rest for 5 minutes. Spoon some of the sauce over the thighs before serving for extra flavor and shine.
