Apple Zucchini Bread

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch (23×13 cm) loaf pan.
  2. In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
  3. In a large bowl, lightly beat the egg. Add the oil, granulated sugar, brown sugar, and vanilla extract, mixing until smooth.
  4. Stir in the grated zucchini and apple until evenly combined.
  5. Gradually fold in the dry ingredients until just combined. Do not overmix.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
