Directions:

- In a medium bowl, whisk together the flour, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, lightly beat the egg. Add the oil, granulated sugar, brown sugar, and vanilla extract, mixing until smooth.
- Stir in the grated zucchini and apple until evenly combined.
- Gradually fold in the dry ingredients until just combined. Do not overmix.
- Fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and serve.
