Apple Pie Bars

Ingredients
For the crust:
- 450 g (4 sticks) unsalted butter, at room temperature
- 150 g (3/4 cup) granulated sugar
- 110 g (1/2 cup) light brown sugar, lightly packed
- 2 tsp pure vanilla extract
- 500 g (4 cups) all-purpose flour
- 1 1/2 tsp kosher salt
- 1/2 cup (50 g) chopped walnuts
- 1 tsp ground cinnamon
For the apple filling:
- 680 g (1 1/2 lbs) Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (about 3 large)
- 680 g (1 1/2 lbs) Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (about 3 large)
- 2 tbsp freshly squeezed lemon juice
- 50 g (1/4 cup) granulated sugar
- 1 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 57 g (4 tbsp / 1/2 stick) unsalted butter
