Step 1: Prepare the Beef
Freeze the beef for 30–60 minutes before slicing to make it easier to cut thin, even strips. Slice against the grain into strips about 3–5 mm thick.
Step 2: Marinate the Meat
In a large bowl, combine soy sauce, Worcestershire sauce, brown sugar, smoked paprika, garlic powder, black pepper, and red pepper flakes if using. Add the beef strips and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
Step 3: Preheat the Air Fryer
Preheat the air fryer to 160°C (320°F) for 5 minutes. Low and slow is key to drying out the beef without cooking it too fast.
Step 4: Arrange the Beef
Place the marinated beef strips in a single layer in the air fryer basket. Avoid overlapping to ensure even drying.
Step 5: Cook the Jerky
Air fry at 160°C (320°F) for 2–3 hours, checking every 30 minutes. Flip the strips halfway through to allow even drying. The jerky should be dry but still slightly pliable, not brittle.
Step 6: Cool and Store
Remove the jerky from the air fryer and let it cool completely. Store in an airtight container at room temperature for up to 1 week, or in the refrigerator for up to 3 weeks.
